2,5 cm piece fresh ginger, finely grated.
3 tbsp chopped fresh mint
2 ripe peaches
75 gram couscous
4 spring onions, sliced
salt and freshly ground black pepper
Put the couscous into a bowl with the ginger. Pour over 75 ml boiling water and set aside for 5 minutes.
Meanwhile, stone and cut the peaches into thin wedges and place in a bowl.
Cut the cucumber in half lengthways and scoop out and discard the seeds. Cut into dice and mix with the peaches.
Add the spring onions to the bowl with the fresh mint.
Loosen up the couscous stir in the peach mixture just before serving. Check the seasoning. Divide the couscous salad between two plates, then add two or three slices of cooked ham to serve.
