4 people BLT salad ingredients;

  • 1/2 ciabatta
    olive oil, for drizzling
    10-12 rashers dry-cure smoked steaky bacon
    85g wild rocket leaves
    120g baby spinach leaves
    16 cherry tomatoes, halved
    salt and freshly ground black pepper

For the dressing;

  • 4 tbsp good mayonnaise
    1 small clove garlic, peeled and crushed
    2 tsp grainy mustard
    1 tbsp sherry vinegar
    4 tbsp olive oil

BLT salad recipe;

1. Cut the bread into cubes, toss them in a little olive oil with some seasoning, and tip into a friying pan. Toast over a low heat for 4-5 minutes. Leave to cool.

2. Mix the dressing ingredients together in a bowl with 1 tbsp of colder water. Grill the bacon under a hot grill on both sides until really crispy, then halve widthways.

3. Toss the leaves in a bowl with the dressing. Divide between four bowls, layering with the tomatoes, croutons and bacon as you go, and serve. Your enjoy meal!
