1 kg tripe (beef)
5 kg of water
1 tablespoon of salt
Half a cup of olive oil
1 clove of garlic
quarter lemon


1 cup of milk or water
2 coffee cups of flour
2 cloves of crushed garlic
1 coffee cup of vinegar
2 tablespoons of butter
Half a teaspoon of paprika
Note: You can carefully collect the oil collected on the tripe while it is boiling with a small ladle. Make the red pepper with tripe oil. Thus, you can be sure that the tripe soup you make will be much better.


After thoroughly cleaning the tripe, put it in a pot; Add salt, olive oil, lemon, garlic and water and bring to a boil on high heat. Take the foams collected on it while boiling with a colander and discard. Close the lid of the pot and cook the tripe for 4 hours, depending on whether the tripe is cooked on medium heat, check if it is cooked, and cool the tripe by pouring it into a bowl with a colander.

Pour 2.5 liters of the remaining tripe juice into a saucepan. If the water is low, add water to it. Boil and add flour and milk in another bowl. and cook on low heat for 20 minutes.

Chop the tripe into small cubes, add it to the soup and serve after mixing. Mix the vinegar and garlic on the side, fry the butter separately, mix it with pepper and serve separately.
