Ingredients

1 cup instant oats (make sure they say gluten free if avoiding gluten)
3/4 cup IG @ @bobsredmill@bobsredmill 1:1 gluten free baking flour (or regular flour)
1 tsp baking powder
1 tsp cinnamon
1/4 tsp ginger
1/8 tsp clove
pinch of salt
2 1/2 Tbsp melted coconut oil
1 egg
1 tsp vanilla extract
1/3 cup pure maple syrup
About 3/4 cup grated carrot
1/4 cup raisins (optional)

For the glaze

2 Tbsp coconut butter
1 tsp almond extract
1 Tbsp honey
a few splashes of unsweetened almond milk to thin it out

Recipe

Whisk dry ingredients in a bowl
-Mix wet ingredients in a separate bowl
-Combine wet and dry ingredients and gently fold in the grated carrot and raisins
-Let the mixture rest in the fridge for at least 30 minutes
-Form into balls and place on a prepared baking sheet lined with parchment paper (makes around 12 cookies)
-gently press the cookies down to flatten slightly (they will not rise much in the oven)
-bake at 325 degrees Fahrenheit for about 15 minutes
-while cookies are baking, prepare the glaze by combing all ingredients in a small pot over low heat
-drizzle on the glaze and enjoy 🙂
