To make artichoke pastry, let’s first remove the artichokes. Then boil it in lemon water until soft. Let’s put oil in the pan. Add the grated carrots and fry for 2-3 minutes. Let’s add crushed cheese, chopped parsley, salt and pepper into the carrots we took from the fire and mix. Let’s fill the artichoke cores with this mixture.

In a bowl, whisk together the eggs, yogurt and oil. Let’s put this egg mixture between and on the dough with a brush. Let’s put the dough on top of each other. Let’s lay a large bowl on top of the dough. Cut out round pieces with the help of a knife.

Let’s put the artichokes in the middle of the dough. Let’s gather the edges together at the top. Let’s turn the yufkas upside down and place them on the tray greased with margarine. I put egg yolk on them. I sprinkled grated cheddar on top. Let’s cook the pastries in a heated oven at 220 degrees until the top and bottom turn a pink color.
