Yesterday was the last sunny day for now, so we decided to put on the barbecue. I grilled these lovely eggplants from Purple Pride and decided to make some delicious tortilla wraps with them. Half of the eggplants I gave an oriental marinade and half an orange honey marinade. I took a tortilla and filled it with some raw spinach and the grilled and marinated eggplant, super delicious!

Oriental marinade

3tbsp Soy sauce
2tbsp honey
1tsp sambal (optional)

Mix all these ingredients together.

Orange honey marinade

1 small onion, chopped finely
-1 clove of garlic, chopped finely
-3tbsp honey
-fresh thyme
-1 orange, zest + juice


Mix the cauliflower rice with a pinch of salt and pepper and the thyme.

Chop the onion and garlic and fry in a pan with some oil. Add the diced chicken and after 5 mins the chopped up bell peppers. After another 5 mins add the fajita spices. When the chicken/pepper mixture is almost ready take another pan with some oil and fry the cauliflower rice. This will need no more than 5 mins.

Make a dressing mixing the tahini with the soy sauce and lime juice. If it’s too thick add some olive oil.

Now take a big bowl and place in some spinach and cauliflower rice. On top you place the fajita mixture, avocado, corn and finish with a bit of tahini-dressing.
