How to make fish curry ? Recipe & ingredients here! The dish that even non-fish lovers will enjoy. Trust us, we have first-hand experience 😉 it takes less than 30 mins to whip up & doesn’t taste fishy at all! Pop it on your menu for this weeks dinners.
1 tbs olive oil⠀⠀⠀
1 brown onion, diced⠀⠀⠀
2 tsp minced garlic⠀⠀⠀
1 tsp minced ginger⠀⠀⠀
1 cup pumpkin, thinly sliced⠀⠀⠀
1 tbs curry powder⠀⠀⠀
1 tsp turmeric⠀⠀⠀
400ml coconut milk⠀⠀⠀
1 truss tomato, diced⠀⠀⠀
2 large white fish fillets⠀⠀⠀
Coriander to serve.⠀⠀⠀
Rice to serve.⠀
Heat the olive oil in a large pan over medium heat.
Add the diced onion, garlic & ginger.
Cook for 5 mins or until brown.
Add the diced pumpkin & stir to combine.
Add curry powder, turmeric & stir to combine.
Stir through the coconut milk with 1/2 cup water.
Cover & let simmer for 10 minutes.
Add in a 1/4 cup water & simmer for 5 mins.
Add in tomato & cook for a further 5 mins.
Dice the fish fillets into small chunks.
Add fish to the pan with another 1/2 cup water.
Cover the fish with sauce & simmer for 10 mins.
Once cooked, serve with coriander & rice!
