She’s a single serve vegan salted double chocolate chip cookie. Mmmmh…
30g (1/4 cup) regular white flour.
1 tbs (7g) cacao powder.
2 tbs (25g) brown sugar.
1/8 tsp baking powder.
1/8 tsp baking soda.
small chia (or flax) egg: 1/2 tbs (5g) chia seeds + 1.5 tbs (22ml) water.
1.5 tbs (22g) nut butter – I used almond butter.
1 tbs (15ml) plant based milk – i used almond milk.
sea salt flakes.
Prep your chia (or flax) egg by mixing 0.5 tbs chia seeds with 1.5 tbs water and soak for 5-10 minutes.
Add the nut butter and milk of choice to the chia egg and mix.
In a separate bowl combine flour, cacao powder, brown sugar, baking powder and baking soda.
Add wet to dry ingredients and mixxx. Fold in a handful of chocolate chips, roll the dough into a ball, place in a baking tray and top with sea salt flakes.
Bake at 175C/350F for 17-20 minutes! Haven’t tried but probably also tastes good when under baked. Enjoy !
