350 gr Penne Rigate pasta
150 g chopped mozzarella cheese
Finely grated Parmesan cheese for serving
A few whole basil leaves to garnish


1 kg of fresh, red, ripe tomatoes
1 tablespoon of olive oil
1 medium onion peeled and finely chopped
1 clove of garlic peeled and crushed
About 12 large fresh basil leaves
Salt and freshly ground black pepper


First, let’s separate three tomatoes and roughly chop the rest.

Heat the oil in a medium saucepan and add the onion and garlic. Let the mixture simmer for about 5 minutes until it turns pink.

Then add a third of the chopped tomatoes and basil to this roasted pink mixture. After adding some salt and freshly ground black pepper, let’s cook the mixture on low heat for about 30 minutes.

After the sauce is well cooked and has a thick consistency, let’s throw the tomatoes and some more basil leaves into the sauce and mix them all with a spoon.

Let’s cook the pasta to our taste. Before adding the sauce to the pasta, let’s sprinkle the mozzarella cheese into the sauce and let it sit for 2-3 minutes to melt. Let’s sprinkle the sauce on the drained pasta and then the Parmesan cheese on top.

Penne rigate pasta is ready to be served when we add basil leaves on top of the pasta with sauce. Enjoy your meal.
