Sharing my super easy green enchiladas, perfect for sharing with friends! No lie, these might be one of the best things I’ve ever made. They are so easy and quick, plus you’ll have leftovers so who can really complain
6 shredded chicken breast
2 cans @sietefoods green enchilada sauce (or any other brand will work)
12 corn tortillas
2 cups spinach
1 juiced lime
1 diced jalapeño
1/4 cup chopped cilantro
In a large pot boil chicken breast until completely cooked. Then shred your chicken. In a large bowl combine your chicken breast, 1 can of green enchilada sauce, juice of lime, spinach, diced jalapeño and 1/4 cup cilantro. Stir together.
Heat your corn tortillas in the microwave inside a damp paper towel for about 10 seconds each. Place a medium scoop of chicken mixture and roll tortilla. Place tortilla seam side down in a large Pyrex dish. Complete this for all 12 tortillas then top with the other can of green enchilada sauce and cheese if you want. Bake on 375F for 15 minutes, then broil on high for 3 minutes.
Serve with jalapeños, avocado and more cilantro. Enjoy!
