Phyllo (also spelled filo or filo pastry) is a type of very thin unleavened dough that is used in many Middle Eastern and Mediterranean dishes. It is often used to make pastries such as baklava and spanakopita, as well as savory dishes such as pies and turnovers. Phyllo dough is made from flour, water, and a small amount of oil or vinegar, and is typically rolled out by hand or with a rolling pin until it is very thin. It is then used as a wrapper or crust for various fillings, and is usually brushed with melted butter or oil to give it a crisp and flaky texture when baked.

PHYLLO CHEESE PASTRY RECIPE
To prepare the cheese pastries, let’s first spread one of the phyllo on a flat surface. Whisk the olive oil and water thoroughly and wet the dough with some of it. Let’s fold the dough in half and cut it into 8 triangular pieces.
Mix the feta cheese, flour, butter, salt and finely chopped parsley. Let’s put the cheese filling on the wide edge of each triangular piece of dough. Then wrap it like a cigar. Let’s repeat the same process in the other dough.
Let’s fill 2 glasses of water in a bowl. Let’s dip the pastries in this water and put them on the tray. Brush egg on it and bake in the oven at 180 degrees for 15 minutes. Cheese pastries made from pink phyllo are now ready to be served.
