How to make oaty fruit & nut cookies ? Recipe and ingredients are here! If you are ready to easily make yummy and delicious oaty fruit & nut cookies, let’s start by gathering the ingredients and preparing the dough first.

I whipped up these delicious little morsels yesterday for the @thementalmaiden for her workshop today, in between working and washing, on what was meant to be a day off!

I’ll be honest, I didn’t measure any of these ingredients accurately and cooked with intuition, so please take the ratios and macros with a grain of salt! Saying that, these tasted DELICIOUS 😋 Enjoy!!


1/2 cup rice flour
1/2 cup oat flour
1/3 cup brown sugar
1 teaspoon baking powder
1 teaspoon bicarb soda
1/2 teaspoon cinnamon
Chia ‘egg’ – mix one teaspoon chia seeds with water and allow to thicken
4 teaspoons vegan butter melted – I used nuttelex lite

Add ins:
Small handful pistachios
Small handful crasins
@peakchocolate rest chocolate bar chopped + 2 bars melted to drizzle over the top (sarah15 to save $)


Preheat oven to 180*C

Make your chia egg

In a large bowl, add all your dry ingredients plus add ins.

dd melted butter and chia egg and mix well. Allow to sit.

You may need a splash or two of almond milk if mixture is looking too dry.

Roll into small balls and flatten on a lined tray – space out as they will spread a little

Bake for approx 10 mins

Allow to cool then drizzle with melted chocolate
