3 Little Gem lettuces or 5 Little Gem lettuce hearts
2 small (about 150g) leeks, trimmed, washed and thinly sliced
750g frozen or freshly shelled peas
1 tbsp chopped fresh mint leaves
salt and freshly ground black pepper
1. Trim the lettuces and cut each lettuce lengthways into six wedges.
2. Melt half the butter in a deep sauté pan over a medium-low heat. Add the leeks and sauté gently for two minutes or until softened. Add the lettuces and cook for 1-2 minutes or until they begin to wilt. Add the peas and 100ml water. Season. Simmer for 3-4 minutes, stirring, until the peas are softened and about half the liquid has evaporated.
3. Dot over the remaining butter, sprinkle with the chopped mint and shake the pan briefly Enjoy your meal!
