250 gram cherry tomatoes, roughly chopped
2 x 410 gram cans cannellini beans, drained
2 x 200 gram cans tuna in olive oil
2 tbsp balsamic vinegar
2tbsp capers, rinsed
8 tbsp extra virgin olive oil
12 spring onions, roughly chopped
100 gram rocket leaves
salt and freshly ground black pepper
Drain the tuna, flake into bite sized pieces and place in salad bowl.
Add the cherry tomatoes and spring onions to the tuna, along with the cannellini beans and capers.
Place the remaining ingredients in the bowl of a food processor and whiz until the rocket is finely chopped and the dressing is combined. Season, mix into the salad and serve.
The flavours in this salad improve if you make it a little in advance. cover and set aside for about 45 minutes before serving. Look out for albacore tuna in extra virgin olive oil to use in this recipe. Your enjoy meal!
