2 people all day breakfast salad ingredients;

  • 2 large, very fresh eggs
    8 rashers smoked streaky bacon
    1 baquetteine or small French stick
    12 cherry tomatoes, halved
    150 gram mixed salad leaves, including frisée
    2 tbsp French dressing

All day breakfast salad recipe;

Pour 2.5 cm of boiling water into a mall frying pan and bring back to a very gentle simmer.

Gently break in the eggs, leave for 1 minute and then take off the heat. Leave for 10 minutes while you prepare the rest of the salad.

Fry the bacon in a large non stick frying pan until brown and crisp. Leaving the fat in the pan, transfer the bacon onto some kitchen paper.

Slice the baquettine into six thin slices. (You will have some left over) and then cut each slice in half. Fry in the bacon fat until it is crisp on both sides.

Put the tomatoes into a large bowl with the salad leaves and dressing. Chop the bacon and add to the bowl along with the warm croutons.

Toss together, divide between two plates and top with the poached eggs. Serve with the extra bread on the side. Your enjoy meal!
