6 Sicilian style sausages
1 small aubergine, sliced lengthways into 5 mm slices
125 gram ready roasted rep peppers, drained and sliced
1 tbsp chopped fresh mint
1 tbsp sherry vinegar
1 large courgette, sliced lengthways into 5 mm slices
1/2 small red onion, ppeled and thinly sliced
4 tbsp olive oil
410 gram can green lentils in water, drained and rinsed
salt and freshly ground black pepper
Preheat the grill to high and cook the sausages on a rack for 15 minutes, turning now and then so that they cook evenly.
Meanwhile heat a griddle pan. Brush the aubergine and courgette slices with oil and griddle until marked on both sides. Set aside.
In a saucepan, combine the peppers with the lentils, vinegar and 2 tbsp of the oil. Warm over a low heat.
Cut the aubergine and courgette slices into smaller pieces and add to the lentils with the mint, the red onion and seasoning. Heat for 1 minute and serve with the sausages.
Sicilian sausages are aromatic and full of flavour. They are spiced with fennel, red wine, fresh garlic and herbs. If you can’t find them use good quality pork sausages instead. Your enjoy meal!
