4 people warm barley salad with butternut squash ingredients;

  • 1 large butternut squash, peeled, deseeded and cut into, 3 cm cubes
    2 tbsp olive oil
    250 gram pearly barley
    200 gram fine green beans, trimmed and halved
    1 medium red onion, peeled and finely diced
    3 stalks celery heart, finely sliced
    3 tbsp roughly chopped fresh mint leaves
    4 tbsp roughly chopped fresh mint leaves
    4 tbsp roughly chopped fresh parsley
    100 gram goats’ cheese
    salt and freshly ground black pepper

For the warm barley salad with butternut squash dressing;

  • 8 tbsp extra virgin olive oil
    1 clove garlic, peled and finely chopped
    1/2 tbsp dried crushed chillies
    6 tbsp red wine vinegar
    1 tbsp runny honey
    salt and freshly ground black pepper

Warm barley salad with butternut squash recipe;

Preheat the oven to 180ºC  (fan 160º C), gas 4. Spread the pieces of squash over a baking tray drizzle with the olive oil and season. Bake in the oven for 20 minutes, remove and set aside.

Meanwhile, rinse the barley, then cook in plenty of boiling, salted water for about 20-25 minutes, or until just tender. In a separate pan, cook the beans in boiling water for 3-4 minutes.

To make the dressing, warm the oil in a pan, add the garlic and chilli and lightly brown over a low heat. Allow to cool slightly, then add the red wine vinegar, honey and some seasoning. Whisk until combined.

Drain the barley and beans and place in alarge bowl. Add the onion, celery and cooled squash. Pour the dressing over the salad and gently mix together. Add the herbs, mix again, then crumble the goats’ cheese on top. Your enjoy meal 🙂
