Tomato, peach and cumin salad recipe
Skin the peaches and tomatoes in the same way. Score the stalk ends with an 2X2. Plunge into boiling water for 20 seconds. Then transfer to cold water. As soon as they are cool enough to handle, peel away the skins. Stone the peaches, deesed the tomatoes and cut both into wedges. Transfer to a bowl.
Heat a frying pan or wok. Dry fry the cumin seeds for about 30 seconds, until they start to smell roasted – you cannot mistake the aroma. Roughly crush them in a pestle and mortar, then add to peaches and tomatoes with the garlic.
Whisk the lemon juice and olive oil with some salt and pepper into a salad to sit for up to an hour.
To serve, garnish with mint leaves and some crumbled Feta or goats’ cheese that has been drizzled with olive oil.
