450g chopped spinach, thawed if frozen
225g mascarpone cheese
25g ground walnuts
6 tinned anchovies
Anchovy oil from the tin
Salt and ground black pepper
1 tsp grated nutmeg
1 tbls olive oil
Grated parmesan, to serve

1. Turn the chopped spinach into the bowl of a food processor and blend with the cheese, nuts, anchovies, anchovy oil, plenty of slat and black pepper and the nutmeg.
2. Bring a large pan of salted water to the boil with the olive oil. Add the pasta and boil, uncovered, for about 10 minutes. Drain well. Heat the sauce through gently and serve with the pasta and Parmesan.
Watchpoint : Make sure you but the right cheese for this recipe. Mascarpone is an Italian cream cheese which is in credibly smooth – It looks like solid dobule cream
Tip : For a stronger flavour use 3 bunches of fresh watercress instead of the spinach. Add 1 sauted onion, 2 crushed garlic cloves and blend with remaining ingredients as above. Enjoy your meal!
