4 Serve pasta alla carbonara ingredients;

  • 225g green tagliatelle
    225g White tagliatelle
    salt
    2 tbls olive oil
    25g butter
    175g lean ham, cut into strips
    2 cloves of garlic, crushed
    75g freshly grated parmesan cheese
    3 egg volks
    300ml double cream
    salt and ground black pepper
    to serve
    2 tbls freshly chopped parsley
    grated parmesan cheese

Pasta alla carbonara recipe;

1. Boil the tagliatelle in salted water. Drain and rinse thoroughly in hot water to remove surface starch. Drain again and return to the saucepan. Toss the pasta in the olive oil.

2. Heat the butter and stir in the ham. Turn and cook quickly, then add the garlic and stir for a further minute. Add the ham and the garlic to the tagliatelle. Keep the pasta warm while you make the sauce.

3. Whisk together the Parmesan, egg yolks and cream. Season. Pour the mixture into a saucepan and stir over a low heat until it begins to thicken. Do not let the mixture boil or the cream will separate and eggs scramble.

4. Carefully stir the sauce and the pasta mixture together. Sprinkle with the chopped parsley and Parmesan cheese. Serve immediately. Enjoy your meal 🙂
