135g mixed salad of watercress, rocket and spinach
1 ripe avocado, stoned, peeled and sliced
30g toasted pine nute
40g cooked crispy bacon
100g fresh White crabmeat
3 tbsp olive oil
1 tbsp lemon juice
salt and freshly ground black pepper
1. Divide the salad between two large serving plates. Dot over the avocado. Pine nuts and broken up pieces of crispy bacon. Top with the crabmeat.
2. In a small bowl, whisk together the olive oil and lemon juice. Season to taste and drizzle over the salad to serve.
(If you can’t source fresh crabmeat then use 1 170g can of crabmeat, drained, instead. Your enjoy meal!
