This sauce is made with a light stock from, for example, goose, chicken, fish or vegetables. The sauce is thickened with plain flour. An egg yolk or a little cream can also be added to give a fuller and richer taste. To make about four servings of light basic sauce:

2 tbs butter
2 tbs flour
400 ml light stock

Velouté sauce recipe

Melt the butter slowly in a saucepan.

Add the flour.

Stir and let butter and the flour sizzle together a little.

Pour in the stock, little by little, stirring all the time.

Cook the sauce for 3-5 minutes, so that it doesn’t taste of flour.

A sauce velouté is an ideal starting point for many good sauces. Here are a few suggestions for flavourings:

1-2 tbs squeezed lemons or

1-2 tbs tomato pureé or

1/2- 1 tsp curry powder (sizzle that together with the butter) or

1/2 fresh red or green pepper chopped in cubes.

Taste the sauce and add salt and pepper if necessary. Enjoy your meal!
