For this sauce, use a brown stock made from, for example, red meat. As with the light basic sauce, this sauce is also thickened with plain flour. It is seldom served on its own but is the vehicle for a wide variety of flavourings. To make a basic brown sauce for about four servings:

2 tbs butter
2 tbs flour
400 ml brown stock

Sauce Espangonle recipe

Melt the butter slowly in a saucepan.

Add the flour.

Stir and let butter and the flour sizzle together a little.

Pour in the stock, little by little, stirring all the time.

Cook the sauce for 3-5 minutes, so that it doesn’t taste of flour.

Experiment with different flavourings, starting with the following:

1-2 tbs tomato pureé or

1/2 fresh red or green pepper in cubes or

1-2 tbs port or madeira.

Taste the sauce and add salt and pepper if necessary. Enjoy your meal!
