How to make vego mediterranean pasta salad ? Recipe & ingredients here! The pasta that makes you run faster, test the theory for yourself  this is a super easy meal prep recipe that we always hammer in the warm months! Pairs perfectly with a BBQ.


1 packet pasta⠀
1 red capsicum⠀⠀⠀⠀
1/2 purple onion⠀⠀⠀⠀
1 cucumber⠀⠀⠀⠀
1/4 cup feta⠀⠀⠀⠀
1/2 cup pitted olives (with 1 tbs of the oil)⠀⠀⠀⠀
1/2 cup sun dried tomatoes⠀⠀⠀⠀
1 cup shredded spinach leaves⠀
1 tsp dried basil leaves⠀⠀⠀⠀
2 tsp minced garlic⠀⠀⠀⠀
1/4 cup red wine vinegar.


Preheat the oven to 180 degrees.⠀

Cut the capsicum & onion into large chunks.

Lie these on a baking tray, spray w/ oil, salt & pepper.

Roast for 20-30 mins or until soft & cooked!

Meanwhile, cook pasta as per packet instructions.

Combine remaining ingredients together in a bowl.

Once cooked, add in roasted veggies & pasta & mix.
