How to make pumpkin cookies ? Recipe and ingredients here !
Ingredients
2 1/2 cups of flour
1 tsp each of baking powder, baking soda, salt
2 tsp pumpkin pie spice
1/2 cup butter, room temp (1 stick)
1 cup sugar
1/2 cup brown sugar
1 cup pumpkin purée
1 egg
1 tsp vanilla
Glaze:
1 1/2 cup powdered sugar
2 tbsp melted butter
2-3 tbsp milk
Vanilla
Recipe
Preheat to 350 and line a couple of cookie sheets w parchment paper.
In a smallish bowl combine the flour, baking soda, baking powder, salt and pumpkin pie spice.
In a larger bowl cream together the sugars + butter for at least a min or two. Add egg, pumpkin purée and vanilla. (One day I will own a stand mixer 😩)
Add in dry ingredients and mix until combined.
Form cookies, flatten balls with finger tips.
Bake 12-16 mins
For glaze: Add sugar to bowl, pour melted butter and milk and mix. Add more milk (a tiny bit at a time !!) if needed.
