50 gram couscous
2 tbsp olive oil
25 gram black olives, pitted and finely chopped
2 sun dried tomatoes, finely chopped
grated zest and juice of 1 lemon
50 gram fresh flat leaf parsley leaves
salt and freshly ground black pepper
Put te couscous and sun dried tomatoes in a large heat proof bowl and pour over 50 ml boiling water. Leave to cool.
Stir in the olive oil, lemon zest and juice, olives and some seasoning. Toss through the parsley just before serving.
You can make the couscous and tomato dressing earlier in the day but don’t mix in the fresh parsley. Put it into a bowl with the parsley leaves on top, then cover and chill. Bring back to room temperature, then simpley toss the parsley through to serve. Now ready fresh Italian parsley salad! Your enjoy meal!
