Crispy chilli chicken salad ingredients
1/4 cucmber
2 spring onions, finely shredded
2 cooked skinless chicken breasts
2 tbsp olive oil
2 tbsp hot chilli relish
juice of 1 lime
1 tbsp chopped fresh coriander
1 little Gem lettuce, leaves separated
2 spring onions, finely shredded
1 lime, cut into wedges, to serve
salt and freshly ground black pepper
Crispy chilli chicken salad recipe
Scrape out and discard the seeds from the cucmber using a teaspoon. Chop and set aside.
Tear the chicken into bite sized pieces. Heat a pan until hot, then add the olive oil. Fry the chicken for 5 minutes, stirring, until it is hot and crispy at the edges.
Take off the heat and stir throught the chilli relish and lime juice. Put into a bowl, toss with the cucmber and coriander. Season to taste.
Serve on Little Gem lettuce leaves topped with the shredded spring onions and lime wedges. Your enjoy meal!
