350 gram fine green beans, trimmed
4-6 tbsps olive oil
2 medium red onions, peeld and each cut into 8 wedges
4 chicken breasts, skin removed and sliced into strips
juice of 1 lemon
2 tbsp small capers, rinsed
50 gram wild rocket leaves
80 gram fresh shaved Parmigiano Reggiano
salt and freshly ground black pepper
Preheat a griddle and bring a pan of slated water to the boil for the beans.
