Beurre Blanc is a classic butter sauce. Other fine butter sauces are, for example, Béarnise and Hollandaise. Béarnise sauce has a slightly acid taste and a full flavour from the tarragon used. It is alson flavoured with parsley. Hollandaise sauce is a little milder in taste and less acid. To make 4-6 portions of Beurre Blanc:
3 tbs white wine vinegar
100 ml white wine or water
255 g butter at room tempature
salt, white pepper and freshly-squeezed lemon juice
Chop the shallots very finely. Mix them with the vinegar and the wine or water in a saucepan. Boil and reduce the liquid by half.
Strain to remove the onion. Lower the heat. Add the butter in small amounts. Whisk vigorously until all the butter is blended in.
Flavour the sauce with salt, pepper and lemon juice. Enjoy your meal!
